Vegetarian summer recipe
Easy step by step for delightful savoury tart Tomatoes, onions and mushrooms, bringing summer vibes to your table or picnic! Ingredients to make this at-home in our online shop.
Ingredients
1 puff pastry
250g chestnut mushroom
200g white onion
2 tomato beef
50g of (coconut) butter
2s.spoon provincial herbs
2s.spoon salt
1s.spoon pepper
1.tea.spoon celery salt
1t.spoon oregano
1 t.spoon chili
1 s.spoon paprika
Fresh sprouts
100g of goat cheese or mozzarella
For the dough
We are using our homemade puff pastry for this recipe
Preheat your oven at 190 degree.
Prepare a tart mould with baking paper at the bottom so the dough is easy to remove once cooked.
Unfold your dough and place it in your baking tray by slightly pressing it in the corner of your mould.
Brush the surface with some oat milk or coconut butter so it takes a beautiful golden colour when it cooks.
Bake for 15-20 minutes 170 degree.
For the garnish
Slice the onion very thinly and cut the mushrooms in the length.
In a pan melt the (coconut) butter on low/medium heat. When the butter is melted, add the onion with a little bit of salt and pepper.
When the onion are slightly coloured, remove from the heat and reserve.
Keep the pan to cook the mushrooms mixed with all the seasonings.
Gently turn the mushrooms in the pan so it cooks evenly, about 3 minutes on each side.
For the tomatoes
Slice the tomatoes about 1cm thick.
In the same pan, add 2 spoon of water to lift the juice from the mushroom, let simmer for a few secondes.
Add the slices with a sprinkle of salt and provincial herbs on top.
Let the tomatoes roast for about 2 minutes on each side.
Remove from the heat and place the slice in circle at the center of your tart.
For serving
Arrange the mushroom in circle around the tomatoes
Place the onion at the center
Decorate with sprouts, bits of fresh mozzarella or goat cheese.
Ready to eat with a side of salad!
