Gluten-free & Vegan loaded waffle

Ingredients:

  • 95g gluten-free flour

  • 1tea spoon baking powder

  • 1 banana ( the browner the better)

  • 60ml oat milk

  • 1 tea spoon white or apple cider vinegar

  • 60ml  coconut oil

  • 60ml cup agave nectar or maple syrup 

  • 65g  gluten-free and organic oats flour

  • 1 pinch sea salt

  • 2 tea spoon vanilla extract

For the topping:

  • Maple syrup

  • Cinnamon powder

  • Dairy-free chocolate chips

  • Sliced bananas, berries or other fresh fruits

INSTRUCTIONS:

1. Mix oat milk, vinegar in a small mixing bowl and let set for a few minutes to activate. Then add coconut oil, agave nectar or maple syrup, vanilla extract and whisk.
2.Combine dry ingredients together in a large mixing bowl. Then pour in wet ingredients and mix until well incorporated. The mixture will be slightly thick. Smash in a banana to add some moisture to the batter.
3. Preheat your waffle maker before pouring the mixture. Cook until perfectly brown on the medium heat setting but for 5-8 minutes. Gluten-free waffles tend to take a little longer to cook than waffles containing gluten. If you open the waffle iron too early they could stick.

4. Allow to cool off before eating for an even better taste! Serve with your favourite toppings: Syrup, cinnamon, chocolate chip and topped with banana sliced, berries or other fresh fruits.

Cooking tips

Once cooked if you want the waffles to stay crispy, keep them sprayed out, not stacked ! You can keep the waffles warm sprayed on a baking tray, in the oven preheated 180 degree.
