FONIO: Gluten-free grain & African Superfood

Fonio is considered as one of the most nutritious gluten-free grain on earth, alongside quinoa. Particularly rich in protein, containing essentials amino acids and keys nutrients often missing in other cereals such as rice, wheat or corn, fonio surprisingly requires very little amount of water to thrive, so is cultivated where no others cereals can grow. It has been cultivated for more than 5000 years in African savannah.

What makes fonio a superfood is its composition specifically suitable to people with dietary requirements , suffering from diabetes or digestive conditions. Its important amount of methionine and cysteine make Fonio a premium source of proteins for vegan and vegetarian. Its glycemic index is also low compared to other staple food like rice or corn; In other words, fonio’ glucose or sugar takes longer to reach the blood stream. Rich in fibres, this grain is easily digested while bringing B1, B2,B3 and B6 vitamins. Moreover, fonio contains minerals such as iron, zinc and magnesium, plus a great amount of phytonutrients enabling the increase of our body’ natural defenses.

Versatile, cooked within minutes, fonio is delicious hot or cold, as an alternative to rice and even flour, in (savoury) cakes or smoothies!

Fonio might look similar to couscous, however is lighter, richer in flavour with a nutty taste and mostly easier to digest.
